Ingredients
- (2 Filets) Beef Filet Mignon
- (to taste) Salt
- (to taste) Pepper
- (1 tablespoon) Beef Tallow (14oz)
- (2 tablespoons) Butter
- (6 cloves) Garlic
- (4 sprigs) Thyme
Directions
Step 1: Season the filets with salt and pepper (I recommend being generous with the salt and pepper, but season to your taste). Let them sit on a plate on the counter for 45 minutes after seasoning.
Step 2: Heat oven to 360°F.
Step 3: Place a medium sized cast iron skillet over high heat for 3 to 5 minutes. Once the skillet is hot add the beef tallow (beef tallow will smoke when added to a hot skillet). Sear the fillets for 2 to 3 minutes per side, until browned with a crust. Remove skillet from heat.
Step 4: Add the butter, garlic, and thyme to the skillet. Place the skillet in the oven for 8 minutes*.
Step 5: Remove the filets from the skillet and place on a plate. Tent the plate with foil and let rest for 5 minutes. Serve with the garlic cloves and butter from the skillet.
*5 minutes for rare filets, 6-7 minutes for medium-rare filets, 8 minutes for medium filets, 9-10 minutes for medium-well filets, and 11-12 minutes for well-done filets.
**Cook times are based on a 6oz filet mignon.
